Ingredients

• 1 cup shredded carrots (about 2 large carrots)
• 1 cup whole wheat or oat flour (or gluten-free flour if your pup has sensitivities)
• 1 egg

• 1/4 cup peanut butter (*ensure its xylitol free and low sodium)
• 1/4 cup honey
• 1/4 cup neutral oil, such as avocado or light olive
• 1/3 cup vegetable/chicken broth (low sodium)

Frosting

• 1/2 cup plain Greek yogurt
• 1/4 cup peanut butter

Instructions

1. Preheat oven to 175 ºC (350º F). Grease or line two round baking trays or silicone molds for some fun pupcake shapes!
2. In a large bowl, combine the egg, ¼ cup peanut butter, ¼ cup honey, ¼ cup oil, and ⅓ cup broth together. Whisk to combine all ingredients, then fold in 1 cup shredded carrots until blended. 
3. Now add 1 cup flour, then fold into the cake batter until just combined to avoid overmixing. Spoon cake batter into your desired pans or molds. 
4. Bake for 40 minutes or until each cake is fully baked in the center so a toothpick comes out clean.
5. Meanwhile, prepare the frosting! In a medium bowl, add ½ cup plain Greek yogurt and ¼ cup peanut butter and stir with a fork until evenly combined. You can add a dash of honey if you think the yoghurt need a bit of sweetening. Cover, then refrigerate until the cakes are ready to be frosted.
6. When the cakes are done baking, remove from the oven and cool in the pans for 10 minutes. Invert the cakes onto a wire rack, remove baking paper and cool completely.
7. Now it's time to frost the cooled cakes and decorate! Spread this creamy goodness on top of your cooled cake for a delicious, dog-friendly frosting. The Finnish Lapphund is well-suited for its native environment, with unique physical characteristics that helped it survive and thrive in the cold, snowy conditions of Lapland. The breed is medium-sized, with males typically larger than females. Their thick, double coat is one of the breed’s most distinctive features, providing insulation against the bitterly cold temperatures. The outer coat is long and coarse, while the undercoat is dense and soft, providing warmth and protection. The coat comes in various colors, including black, brown, cream, sable, wolf sable and domino, and may have distinctive markings or a solid color.

In addition to their remarkable coat, Finnish Lapphunds have a gorgeous fluffy tail that curls over their back, typical of spitz breeds, which is another trait that helps keep them warm in frigid temperatures. Their attractive fluffy ears are also well-suited to the environment, as they help prevent snow from accumulating inside, while their keen sense of smell and hearing makes them exceptional herders.​
